I remember growing up my mom always bought peanut brittle at Christmas time.  I am not sure why that was but to this day I associate Christmas with peanut brittle.  I figured this year I would share my favorite simple to make holiday peanut brittle recipe that you can make right at home.  I like a buttery flavor to my brittle so I am using a nice flavorful Irish butter in this recipe. Although corn syrup has gotten a bad rap in recent years I really like it for this recipe.  There are recipes out there for brittle without corn syrup but this one is my favorite so I am being bold and using it anyway.  Eat it yourself or package it up and give it as a holiday gift to friends and family.  Either way making this recipe will quickly become a holiday favorite for you too.

What you Need:

  • 2 Tblsp. Irish butter
  • 1 cup sugar
  • 1/2 Cup light corn syrup
  • 1/2 Tsp. salt
  • 1 Cup Peanuts
  • 1 Tsp. Baking Soda
  • 2 Tsp. Vanilla

What you will Need Peanut Brittle

Step 1: Delicious Holiday Peanut Brittle

Spray a baking sheet with cooking spray or cover with butter.

Step 2: Delicious Holiday Peanut Brittle

Cook the sugar, corn syrup and salt in a medium-size heavy saucepan over medium heat, stirring constantly.

When mixture starts to boil stop stirring for 5 minutes or until a candy thermometer reaches 310°.

Boil for 5 Minutes

Step 4: Delicious Holiday Peanut Brittle

Add peanuts, and cook 2 to 3 more minutes or to 280°.

Remove from heat, and stir in butter, baking soda, and vanilla.

Step 6: Delicious Holiday Peanut Brittle

Pour mixture onto the baking sheet and spread in a single layer.

Step 7: Delicious Holiday Peanut Brittle

Allow to stand 10 minutes or until hardened and cooled. When cool, break into pieces.
