Creamy Strawberry Mousse Dessert

This is a smooth and creamy strawberry mousse dessert that is the perfect end to any summer’s day or romantic valentine’s dinner. It is the perfect combination of sweet, tart and light.
What you will need: Creamy Strawberry Mousse Dessert
- 1 lb of fresh ripe strawberries. You can use frozen if strawberries are not in season.
- 3 Tablespoons of granulated sugar
- 1/2 cup confectioner’s sugar
- 1 1/4 cups heavy cream
- Red sprinkles
- 4 Martini glasses or other vessel for serving
Step 1: Creamy Strawberry Mousse Dessert
Hull and slice the strawberries. Place the strawberries in a bowl and mix in the granulated sugar. Let the strawberries macerate for about 1 hour in the refrigerator so that all of the juices have leached out and what is left are the strawberries and a nice simple syrup.

Place the macerated strawberries into a blender and puree.

Step 3: Creamy Strawberry Mousse Dessert
Combine the confectioner’s sugar with the heavy cream. Using a stand mixer with a whip attachment or by hand whip the heavy cream until it has stiff peaks. Set aside 1/4 of the whipped cream and 1/4 of the strawberry puree and refrigerate. Fold in the remaining strawberry puree into the rest of the whipped cream making sure that the cream stays light and fluffy.
Step 4: Creamy Strawberry Mousse Dessert
Arrange 4 Martini glasses or other serving vessels and pour the strawberry puree or some of the macerated strawberries at the bottom of the glass. Place the strawberry and cream mixture on top pf the strawberries until it nears the top of the glass. Then place a dollop or two of the fresh whipped cream on top and sprinkle with sprinkles or garnish with fresh strawberries.
